These ice creams are a delicious summer treat.  I find that when Frankie has off days, or is simply too hot to eat anything, this is our go to. She gets so messy when she eats them, but loves it and always asks for “more ice-cream”. We even use it as a bribery trick sometimes.  I sneak some spinach into the mix too, so there’s a little something nutritious in there to please us parents – so here it is my delicious and nutritious homemade ice cream recipe.

Ingredients

  • 1/2 cup Strawberries
  • 1/4 cup Spinach
  • 1/4 cup Yoghurt
  • 3 Dates
  • 1 cup Coconut Cream
  • 1 Banana
  • Some water
  • 6 Paddle pop sticks
  • 6 Ice cream moulds

Recipe

Blend the strawberries, spinach, yoghurt, dates, half the banana and half the coconut cream together with a little water. Add the water slowly as you want the mixture to be a little thick.

Pour it 3/4 full into the ice cream moulds and freeze for an hour or so.

Blend the other half banana and coconut cream together and pour on top of the ice cream and freeze for another hour and enjoy.
